National Lampoon's Vacation - vacations really only ever happen in summer.
Wet Hot American Summer - since this takes place in Maine, it would've been a much different movie if they had it take place in winter. I just don't think a talking can of mixed veggies would've made sense in winter.
Meatballs - camping with Bill Murray and leaving the camp director out in the middle of a lake while he's still in bed are great examples of fun summer activities.
Predator - a lovely Central American vacation movie starring Arnold Schwarzenegger's biceps which are, thankfully, prominently displayed thanks to his characters' propensity for wearing sleeveless shirts. It incidentally features a large alien that hunts humans for sport which is good summer fun.
Friday the 13th - Lots of summer hijinks occur like teens having sex and then getting stabbed by a deranged, Evangelical woman.
One Crazy Summer - there would've been no point to this movie if it took place during any other time of the year. Watching Bobcat Goldthwait destroy a set of miniature model homes while dressed as Godzilla and listening to Demi Moore attempt to sing just wouldn't have hit as well if we were watching them do it during springtime.

Summer Rental - "After air traffic controller Jack Chester loses a plane (it's covered on his screen by a fly), he's told to take a break. Jack books his family into a plush resort, but it turns out that their lodgings are in a hut by the beach, and that's as good as the vacation gets."
John Candy being the bumbling dad on vacation!
The Great Outdoors - "It's vacation time for outdoorsy Chicago man Chet Ripley, along with his wife, Connie, and their two kids, Buck and Ben. But a serene weekend of fishing at a Wisconsin lakeside cabin gets crashed by Connie's obnoxious brother-in-law, Roman Craig, his wife, Kate, and the couple's two daughters. As the excursion wears on, the Ripleys find themselves at odds with the stuffy Craig family."
