This is my theory on Gabriel and who he is and what his backstory really is. Gabriel was never really a priest. After the outbreak he stumbled upon the church in the woods, which was vacant. He found the priest attire inside the church and concocted his story that he was the priest of the church. The entire story of the church members banging on the church door for shelter during the outbreak was a made up story from Gabriel to make him more believable to Rick and the group. He puts on the facade of a religious priest so he can sponge off of groups for food, water, shelter, protection, etc. The night he left Alexandria he came to a realization that the gig with Rick and Alexandria is up and time to move on to the next best thing so he took all the supplies he could get and left.

I noticed it too. I had to do a second take. I can't think of who was missing from the episode. They even showed Carol's short lived ex and Aaron's boyfriend. The only one they didn't show is Judith.
Edit: Heath wasn't there. I always forget about him. He is MIA but I doubt that was him unless he came back and info that he told Gaberiel.
