I liked the first season best when the concept was new and the story was fresh and addictive. Every moment was so unexpected and spine chilling.

I haven't found any of the AHS seasons particularly scary, yet the Satanist sequences in
      Apocalypse
I did find a little chilling. I didn't like Connie Britton in season 1 very much. I wasn't getting any chemistry between her and McDermott, and lets face it, he was far better looking and had more charisma.
Season 1 tried to be spooky, but it wasn't really happening for me. I did like Jessica Lange and Frances Conroy though.
The next season I saw was 3
      Coven
and I loved it. Lange was terrific, along with Bates and while again, I didn't find it scary and was more parody, the sets, costumes and ott excesses were very welcome.

You're missing season 10 from last year. It was called "Double Feature."
I liked Freak Show the most too.

I only found out about AHS
          Double Feature
last week. I will add it. Is this different stories each episode?
          I could probably claim
          Hotel
as my personal favorite. It looked great and had some very interesting characters and was very graphic in parts, but
          Freak Show
was a little more grounded and not so much supernatural. That psychopathic killer clown was freaky.

Double Feature was a season with two separate stories of about 4 or 5 episodes each. There is also American Horror
            Stories
where each episode is a stand alone although there are still connections to the whole series like the murder house.

It must be the Stories one I heard about last week then and hadn't even heard of Double Feature.
I can't get 1984 on blu ray yet, not available, and I only stream from Netflix.

There were two stories last season. The first one was called "Red Tide" and the second one was "Death Valley."
I wonder when the new season will air. As of an August 18 article, there was still no airdate announced, but here's some info:
FX Chairman John Landgraf told The Wrap in February that the 11th installment of the Emmy-winning series will not be another “double feature” like Season 10, which was split into two parts titled “Red Tide” and “Death Valley.” “What I can tell you is that the concept for Season 11 is one story,” he confirmed. “It actually takes place in different timelines but it’s one subject, one story, with a beginning, middle and an end, like many of the prior stories.” Landgraf remained tight-lipped about the theme of the upcoming cycle, only saying, “I actually really like this idea too, I think it’s really cool.” If history is any indication, Ryan Murphy will be the one to break the news of the fresh plot, at a time and place of his own choosing.

I have heard 1984 is quite cool, although Evan Peters isn't in this one.

Those seasons were ok. I think I liked some things about the seasons, but there were also some things I didn't like. 1984 was better than Double Feature.
I just looked at a thread I started here last year about Double Feature, and I wrote this about the first part (Red Tide):
"The first part only had six episodes, but it still wasn't done very well. It had some interesting characters, but it was pretty repetitive and the finale was bad."

It’s been so long since I’ve watched them so it’s hard to remember but similar to what NZer said, Murder House does stand out because it was a cool new concept and kind of creepy. Asylum was pretty cool too.

My order originally to watch was season 1,3,2 and then the rest in chronological order.
                        I really did like
                        Asylum
very much, but it just threw so much into the mix, it was also over-whelming. I thought Lange was best in season 3
                        Coven
, yet apparently her personal favorite is
                        Freak Show
. Kathy Bates had to play one of the most despicable, sick, depraved and horrendous psychos ever committed to film in
                        Coven
                        .

The first one I watched was Freak Show, I didn't really know what to expect but soon became a huge fan. The Elsa Mars story was horrific, Dandy and Gloria Mott were deliciously unhinged. I think I caught up with the Seasons in order after that, Murder House took me a while to get into but once I did I thoroughly enjoyed it but Asylum is my favourite.
Like you I have enjoyed all of the Seasons up to Roanoke which, as previously discussed, was terrible. In my opinion it was definitely the worst.
