Beetlejuice isn’t that strong really, he has access to an amazing bag of tricks but is still limited by the rules of his world. He works as a freelance bio-exorcist and has probably done the job for hundreds of years so is very good at what he does.
Would Beetlejuice be able to defeat Spock if he was hired to bio-exorcise him?
Beetlejuice is hired by other ghosts to exorcise the living from places the ghosts want to haunt. The trouble happened when beetlejuice decided he wanted to stay in the real world.
So if he would succeed in being able to stay permanently in the real world, would he then be able to be destroyed forever?

Well, I don’t think Spock has the human flaws of egotism the way the Deetz family did, so it’s unlikely that any ghosts would be compelled to have Spock bio-exorcised from any property. However, if he were to find himself in a situation of a haunted grounds, it circles back to the idea of Spock being Unphase-able by any paranormal events due to his extreme intelligence and rational mindset. It’s possible that Beetlejuice’s chaotic actions might throw Spock for a loop at first, but he would no doubt have an easier time foiling Beetlejuice’s plan than the Deetz family did.
I think once Beetlejuice has permanent power in the real world, it would be extremely difficult to defeat him as the normal incantation would no longer work. Beetlejuice would be a walking biohazard, at that point Spock would no doubt work with the federal government to contain Beetlejuice, although more than likely Beetlejuice would flee and be difficult to track down. Basically all bets are off once Beetlejuice completes the ritual.
Frankly, I wish that was a direction they went with the sequel

But if Spock and Beetlejuice were in the same room in a fight to the death, how do you see it going? Could Spock kill Beetlejuice, or at least walk out alive?

The irony is that neither Spock nor Beeteljuice can physically harm each other. Beetlejuice can only scare people, and he’s an immaterial ghost.

What is so special about Spock?
Spock understands the trauma of human existence, for he is not home with earthmen or Vulcan; he can function only in the fabricated and neatly ordered society of the Enterprise. There, he knows who he is; he relates to his role very specifically, and this gives him a kind of cool.

                        What qualities does Spock have?
Spock is a highly self-controlled character and is able to keep his emotions in check even in the face of extreme stress or temptation. This self-control allows him to make logical and rational decisions and helps him to maintain his calm and focus in difficult situations.

                            What are Spock weaknesses?
Lack of emotional intelligence. At least in his early career Spock did not fully understand the emotional subleties of dealing with humans which caused some friction and impeded his effectiveness as a commander. Inflexible thinking. Illogical actions could flummox him and give his opponent the upper hand.

beetlejuice exists, but he is not alive, he is an undead ghost.
Because ghosts can’t technically be killed twice, the only way to get rid of beetlejuice for good would be to trap in the afterlife permanently using supernatural means, but it’s not explicitly stated in the movie how that would happen.
Maybe Spock could figure out a way to send him into a black hole that would warp time and reality and send Beetlejuice to another dimension, although that’s just the plot for Star Trek 2009,
