You can usually tell after the first round …

whether or not the winning team has any chance of winning the $20,000. It mostly depends on the celebrities in my opinion.
A few days ago it was Sara Rue and Weird Al Yankovic. They're good players, and it seems like they like playing and actually want to see people win. There was also an episode earlier this week with two actresses from the Pitch Perfect movies, Alexis Knapp and Hana Mae Lee. Alexis did well in round one but seemed to lose interest in being there after that. Hana Mae either had zero interest in being there or was just terrible at the game. The final round was brutal; the first player got 3 right in 45 seconds, and the second player got none because he was stuck on trying to get them to guess one clue was the Denver Broncos.
Agree or disagree the first round will tell you how the finale will go? -

Sometimes they care but are still terrible players. One show last week (I think) had Rick Fox and Gilles Marini. They were both nice enough but Fox seems clueless about the simplest things and Marini - who was born and grew up in France - doesn't seem to be aware of common North American pop culture.

Top 3 celebs I'd say are Weird Al, Ross Matthews and Mario Lopez. As long contestants in final rounds aren't complete idiots, these three will usually win them money. But it's also a guaranteed loss if it's Guillermo, Mel B and Tom Arnold.
But found it funny that comment David Arquette said - I'm channeling Tom Arnold. -

he was stuck on trying to get them to guess one clue was the Denver Broncos.
This gets back to my pet peeve about this show, which I've posted in its own thread, i.e., how they try to actually describe the clue itself, instead of simply using OTHER things to get the person(s) to say the answer. With "Denver Broncos," what DIDN'T we hear? "The biggest city in Colorado?" and "a horse, a bucking?" Instead, they went on and on trying to get information about the FOOTBALL TEAM out. Such a waste.
Regarding your actual question, I find it's usually pretty clear after the first round, but not always. Every once in a while there's a "come from behind" team who looked awful early on, and then ended up winning the game and the jackpot.
