we are made of the same atoms and elements made in stars that also make up the rest of the entire universe. which means the same atoms and elements that make up humans, and give us our sentience and powers of observation, are looking at other structures in the universe also made up of the same atoms and elements and observing them. so in a round a bout way, the universe is observing itself through humans.
in that way we are just a small part of the universe's attempt to understand itself and we may not be anything more than fragments of the universe's imagination. we don't exist inside the universe, we are a function of a sentient universe.
the only question remaining is why the universe gave us the ability to poop and pee instead of directly using photosynthesis and not having any gross byproducts of digesting other living things

It wasn't sentient at the beginning. It only developed sentience as the universe evolved and became more complex, allowing feedback loops and positive reinforcement. Just like how the brain works. In fact it's the exact same thing. We are the universe, the same atoms that were there at the beginning, but now these atoms can think. Unfortunately the process of getting here was not a conscious one and it requires energy consumption (food) to counteract the normal entropic forces driving the universe toward disorder, and that is why we poop.
