Why is everything in English is pronounced differently than it's written?

Some of it is very illogical. It can be very difficult if it's not your first language. Gallagher does a great routine about it. He also gets in a jab at the Japanese language.
PS He even mentions one of your favorite words: Tomb.

Yes sir. He stopped being funny, and turned into an angry man who ranted and insulted the audience. I've seen him actually spit out into the audience. I think that's when I stopped having any interest in his work.
