Catch 22, Hot Fuzz, The Wicker Man and From Dusk Till Dawn come to mind. They’re informative and entertaining and even a film I hated like Hostel can have a good commentary. I also recommend the commentaries by Christopher Frayling for the Sergio Leone films. Avoid commentaries by Ridley Scott unless you’re looking for a good night’s sleep.

Director Abel Ferrara's hilariously rambling and just barely coherent commentary for his film Driller Killer in which he sounds like he's drunk as a skunk.
You've seen Guy Standeven in something because the man was in everything. -

Vincent Gallo said he went into his trailer and stole from him, lol.

If you like that, you should also check out Mickey Rooney's commentary for 'The Twilight Zone' episode, 'The Last Night of a Jockey'. Mickey is so grumpy and uncooperative that you would really feel bad for the poor guy trying to talk to him on the track if you weren't so busy laughing your ass off.

I like the Making of documentaries.
I generally enjoy commentators if they are fun as well as informative.
Off the top of my head, two of my favorites are:
Mommy Dearest. John Waters's commentary is just wonderful. Watching it with him is like watching with a friend.
Stephen King's IT, 1990. The audio commentary includes actors, Dennis Christopher, Tim Reid, John Ritter, Richard Thomas, and director, Tommy Lee Wallace.
It's very insightful, full of interesting stories about the locations and the other actors, funny things that happened during the shoot. I've seen the mini series so many times, that if I am going to watch it now, I watch with the commentary on. It's much more fun.
Almost forgot! All About Eve! The AMC Backstory is included!
You asked a pretty question; I've given you the ugly answer.

I like a good audio commentary. My favorite is The Thing with John Carpenter and Kurt Russell.
Any commentary with Tom Cruise is good, too. He brings the same energy to that, my favorite of his is the film Valkyrie.
A comprehensive documentary on the making of the film is also great. Spielberg doesn't do audio commentaries but most of his films include the best documentaries. -

I love them, too.. Unfortunately, my DVD player isn't working, and I gave most of them away and only kept the concerts and stand-up specials.

Too bad you have me on block otherwise you would get to read what is perhaps one of the best DVD special features of all time for the best movie ever made.
Oh well.
Your loss.
