Has anyone tried this?
Not the kind that's mixed with lots of sugar, or maple syrup, or marshmallows. Just plain sweet potatoes that are mashed.

Those sound good. I've made something similar in the air fryer.
Usually, I would just bake them and put butter and salt & pepper on them.

It is one of the easiest breakfasts I make.
Steam them then mash them on a plate with a fork and top with margarine, salt, onion and garlic powder with nut. yeast.
