What temp are you cooking at, and how thick?

350, which isn't that low. Not surr of the size but they're small. I've cooked chicken the same way, and it didn't dry out.
I don't really care for pork chops. I'd have preferred to do a pork stir fry or pulled pork.

You might want to lower the temp, but 350 should be good if you're eating soon.
They might not be as tender.

1/2 to 1 inch thickness at 250 for a couple of hours, covered.
A small amount of water in the pan - do not put too much.
Flip halfway through the cooking process and cover.

Usually would go lower, but like I said, my mom has weird tastes lol. She doesn't want em to fall apart. This is one of the things she wanted.
