I don't think they were trying to control people by invoking god. I think over the centuries they learned eating pork could be dangerous, so it's prohibition was part of the natural order they attributed to god.

Okay, so we 100% agree. My language could perhaps be perceived as cynical, but it wasn't intended as such.
I imagine there were a number of deaths from eating pork/shellfish and the elders have spotted the pattern, deemed those foods off limits, and then speculated on the reasons why they were bad.
God was of course the reason for everything in ancient times and so it was naturally considered his will that those foods be avoided. The reason he wanted them avoided was man made though, so at some point somebody has had to turn speculation into "fact".

If you both had to pick one religion though, which one would you choose to follow, and why? Since I tend to disagree with a lot of the beliefs in every bible that I read, I’m currently agnostic.

Hinduism. It's pantheistic and I'm an atheist but a pantheist as well. I'm not a nihilist and believe there is an unexplained order to the universe.
If I were to be Christian I'd be Mormon.

I was walking past a farm in New Zealand. There was an enclosure outside the main field, and in it were a dozen little bobby calves. I knew why they were there. As I walked by, a truck arrived to pick them up, and they were chucked into that truck as though they were already dead.
I made up my mind, right there, that I would never be a part of that kind of cruelty ever again.
My health improved tremendously too. -

So to sum it up, you had a deep emotional bond, and you didn’t want to eat meat again because you saw the process of animal cruelty getting enticed in front of your very own eyes? That’s another reason why I eat less meat, since it would remind me of the deaths that I’ve witnessed in front of my very own eyes. I’d detest having my stomach digesting the same amount of horror that my eyes had to in heavy doses.
