Most of the plain recipes I have and have found have nutmeg in them. The person I'll be making them for dislikes nutmeg in general. I wonder if it's lost in the recipes or can be tasted. I can substitute something else but still want them to seem like plain doughnuts, her favorite. She only has a small sweet-tooth.
Also, if I do substitute it then with what? It would have to be something seemingly neutral to remain plain. I thought about vanilla but I only have liquid vanilla on hand and unsure if the liquid, especially if using an alcohol extract, would work well as a one to one sub with the nutmeg powder. -

Are you making cake donuts?
You could replace the nutmeg with something like cloves or cinnamon or mace, or a combination of those spices, but they are much stronger than nutmeg if you're going for plain. If your friend doesn't like nutmeg to begin with I doubt the flavor will get lost in the cooking or baking process. Why not leave out the spices all together? The copycat krispy kreme recipes don't have any spices in them.
What about ginger bread/molasses (if you're looking for a fall or winter flavor)? You could also try lemon or almond extract for something different. This post is giving me some great ideas
We used to go to this place that made fresh pumpkin and apple donuts when I was a kid. I didn't care so much for the pumpkin ones but the apple donuts were to die for. Both melted in your mouth and were served warm with a glass of hot or cold apple cider.

I have a doughnut cutter and doughnut pan so they will be baked. This person is picky about sweets but enjoys the plain timbits from Tim Horton's. She goes out of her way to go to one that still offers the plain ones.
I'd like to make plain doughnut holes for her but not have them too bland. If nothing is used then they may be but something common like vanilla may sweeten them. I planned to make them, I also have a doughnut hole pan, because she's also complained about some places using what tasted like "old grease". She sounds hard to please but she is older and has to take a few medications so it makes her tastes sometimes bothersome.
She doesn't like gingerbread but I do. Thanks for the idea to make gingerbread doughnuts for those of us who do like the spice.
Yes, I too have enjoyed doughnuts at cider mills. They were so good on a fall day.
