This is really good, and easy to make, but it take a long time. 1) You have to let the fruit drain for 3-4 days. 4 days are better, but three can do in a pinch. Then it has to "set up" 24 hours before you needs it. This can't be made in 30 minutes, but, if you follow the rules to make this.it's so worth it.
      1 Can Pineapple chunks
      1 Can Mandarin Oranges
      3 Bananas, sliced.
2 cups marshmallow miniatures (more or less if you want)
      1 can maraschino cherries
      1 Cup cool whip
      1 Cup seedless grapes
      Nuts:optional. ( I don't use them)
      1 egg beaten
      2 tablespoons lemon juice
      2 tablespoons Sugar
      punch of salt.
Mix the lemon juice, eggs. sugar and salt in broiler. Cook for 5 minutes. Then let it cool.
Fold in the whipped cream them mix in fruit add marshmallows. .
Let set 24 hours before serving.
Trust me folks, this is fantastic.

My mom use to make that salad. It's what my brother elegantly called 'crap salad' because he said it was full of all kinds of 'crap'.

            Scalloped Corn with Oysters
            3 tablespoons butter or margarine
3/4 cup coarsely crushed saltine crackers (about 10 crackers)
1 large onion, finely chopped (1 cup)
2 cups fresh corn kernels or one 10-ounce package frozen
            whole kernel corn, thawed
            1 14 3/4 - ounce can cream-style corn
1 cup coarsely crushed saltine crackers (about 14 to 15 crackers)
1 cup milk, half-and-half, or light cream
1 8 ounce can oysters or oyster pieces, drained
            3 eggs, lightly beaten
1 4 - ounce jar diced pimiento, drained (optional)
1/2 teaspoon ground black pepper or 1/4 teaspoon cayenne pepper
            Directions
Grease a 2-quart oval baking dish, 2-quart round casserole dish or 8x8x2-inch square baking dish (2-quart); set aside.
For topping: In a 12-inch skillet, melt 2 tablespoons of the butter over medium heat. Add the 3/4 cup crushed crackers. Cook and stir until crackers are light brown; remove from skillet and set aside.
In the same skillet, melt the remaining 1 tablespoon butter over medium heat. Add onion. Cook onion until tender, stirring occasionally. Stir in corn, cream-style corn, the 1 cup crushed crackers, milk, drained pimiento, oysters, eggs, black pepper and, if you like, paprika.
Transfer corn mixture to the prepared baking dish. Sprinkle on topping.
Bake, uncovered, in a 325 degree F oven for 35 to 40 minutes or until center is set and a knife inserted near center comes out clean. Remove from oven. Let stand for 10 minutes before serving. Makes 8 servings.

I either make these for Thanksgiving or for Christmas!
They're even a hit with my dad, who is not a huge fan of baby carrots.
              BROWN SUGAR-LEMON CARROTS
1 pound bag of baby carrots, rinsed
              2 tablespoons light brown sugar
              3 tablespoons butter
1/4 tsp freshly grated lemon peel
Boil baby carrots till of desired doneness. Drain well & return to saucepan.
Stir in butter, brown sugar, and lemon peel.
Over very low heat, stir very gently but constantly, until butter & sugar are melted.
I'd say this cloud is Cumulo Nimbus.
              Didn't he discover America?
              Penfold, shush.

                http://www.cookingchanneltv.com/recipes/chuck-hughes/spinach-gratin.html
                Spinach Gratin
                INGREDIENTS
3 tablespoons/45 ml butter, plus more for greasing
                2 pounds/1 kg baby spinach
                1 onion, chopped
                1 clove garlic, minced
                2 tablespoons/30 ml all-purpose flour
                1 cup/250 ml 35-percent cream
                1 cup/250 ml milk
2 cups/500 ml grated Emmental cheese
Kosher salt and freshly ground black pepper
                DIRECTIONS
Preheat the oven to 400 degrees F (200 degrees C). Butter an 8 cup (2 l) gratin dish.
In a skillet over medium-high heat, warm 1 tablespoon butter. Add the spinach and cook, stirring occasionally, until just wilted, 3 to 4 minutes. Press out any excess water. Transfer to a large bowl.
In a large saucepan over medium heat, melt the remaining 2 tablespoons butter. Add the onions and cook, stirring, until translucent but not brown, about 5 minutes. Add the garlic and then the flour and cook, stirring constantly, until nutty and just golden, about 1 minute. Slowly whisk in the cream and milk and continue cooking until thickened, about 3 minutes. Remove from the heat and stir in half of the cheese until melted. Fold the sauce into the spinach and season with salt and pepper. Transfer to the prepared gratin dish and top with the remaining cheese. Bake until the gratin is golden brown on top, about 10 minutes.
