It's fruitcake time

I LOVE "Summer Fruitcake"! I'd always go to our Whole Foods Market, and get all the "Golden Fruits". Cherries, Cranberries, Apricots, Pears, Pineapple, Dried Apples, golden raisins, papaya, peaches and slivered almonds.
Bring up your "summer" crocks, fill with the fruits and almonds and marinate with good bourbon. Store the crocks in the dark basement, checking occasionally to make sure the fruit doesn't dry out. (the fruit "mellows" for about six months.)
Retrieve your "winter" crocks, that have been marinating since the new year: Black Raisins, Dark Cherries, Chunks of black figs, prunes, dates, candied orange rind and lemon rind, dried strawberries, currents and blueberries. The nuts are walnuts and pecans, and these cakes are marinated in the best brandy you can afford. (If the Brandy is cheesy, use Bushmill's Ten Year Old Irish) This is the classic, Black Fruitcake, heavy with spices, bits of candied ginger and organic Blackstrap molasses.
June is the time to make your Christmas (Dark) Fruitcakes. The cake is any standard fruitcake recipe, but darker and spicier. When cakes are thoroughly cooled, wrap in brandy soaked cloths and heavy weight foil making sure the wrappings stay moist. Halfway through December, your Christmas cakes are ready.
After the Holidays, you make your "Summer" Fruitcakes, with a golden poundcake base. Wrap, marinate and store, just as you did the Black Fruitcakes.
After a while, you get into the routine, and it's always good to have something available for staff and holiday parties. (VBS)

One of the wedding cakes Prince Harry and Kate had was a fruit cake, I think the other cake was chocolate. Fruitcake seems to be popular in the U.K. but I'm sure its different from those "door stops" we get here in the U.S. I never liked fruitcake but I never had a homemade fruit cake.

I was asked to make Fruitcake one year, by a relative. Since there were children eating it, it had to be sans alcohol.
This was the days before the Internet, so finding such a recipe that might actually be tasty.was tough.
But I managed!
Its still the best Fruitcake I have ever had. Its candied fruit baked into a sweet vanilla batter.
I'd say this cloud is Cumulo Nimbus.

I've never had really good fruitcake. My grandmother would never make it preferring to buy it but the bought fruitcake was horrible. Maybe I'll try to make it this year and see what all the raves are about.

Be sure you go to a Health Food or Whole Food shop, and get dried fruits without all the sugar syrup. You can also get blackstrap molasses, which also cuts down on the "yuck" factor. If you ever see anything called FRUITCAKE MIX, run, lock your doors and HIDE! That's the stuff that gives fruitcake its bad reputation.

I have the molasses on hand and I'll look for the other ingredients next week.
Thanks so much for the tips. I've always wanted to try making fruitcake but shuddered at the thought of it tasting like the kind I grew up with.

Here is the recipe for the (quite yummy!!) Fruitcake I made that year, if anyone is interested.
FRUITCAKE
1/2 cup sugar
1/2 cup shortening
3 eggs
1 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups (1 lb.) mixed candied fruit
1 cup slivered almonds or other nuts (optional)
Preheat oven to 300F. Grease 9x5 inch loaf pan; line with wax paper or foil.
Gradually add sugar to shortening; cream until light & fluffy. Add eggs, one at a time, beating well after each.
Combine remaining ingredients. Add to egg mixture; mix well. Pour batter into pan.
Bake 1 1/2 to 2hours or until toothpick inserted in center comes out clean.
Cool; remove from pan, peel off paper or foil and cool completely.
Wrap tightly & store in refrigerator.

The texture might be different using butter, but go ahead of course if you like.
Shortening tends to make certain cakes lighter.
