    This is about how my Mom made them- the crushed crackers is exactly what she used. Maybe the lemon pepper would be a little fancy for her. As I remember, Mom fried them, rather than baking.
    1 (7 ounce) can salmon, drained and flaked
    1 egg, beaten
    1 tablespoon olive oil
    2 green onions, finely chopped
    2 cups finely crushed saltine cracker crumbs
    lemon pepper to taste
    Directions
    Preheat oven to 375 degrees F (190 degrees C).
    In a medium bowl, mix together salmon, egg, olive oil, green onions, and 2/3 cup cracker crumbs. Season with lemon pepper. Form mixture into 8 patties. Coat patties with remaining cracker crumbs, and arrange in a single layer on a baking sheet.
    Bake 10 minutes in the preheated oven, turning once, or until golden brown on both sides.

        I've never used shake n bake. I can see using the other breadings. I use corn meal for other things.

          Sounds a lot like my mother's but she didn't use lemon pepper or olive oil. Maybe I can make them for my husband and salivate while he's eating them. I don't miss shrimp but I miss salmon, tuna, sardines, smelts and Lake Perch. Food allergies suck.
