There is "proof". There are photographs and videos and not all of them are hoaxes. But keep in mind, most sightings happen in only a matter of seconds. By the time you've got your camera out, the specter or cryptid in question is usually gone. There's also the fear factor. If one actually encounters a paranormal entity or an 8-foot-tall cryptid, one's first instinct will probably be to remain undetected or to run like hell, and not to stick around and take photos.

I am not aware of any more photos/vids of Mr. BigFeet then the famous, blurry one of him from the 70's, which turned out to be a man in a costume as he claims and I am inclined to believe.
But keep in mind, most sightings happen in only a matter of seconds.
By the time you've got your camera out, the specter or cryptid in question is usually gone.
As one of those who is of the rare breed that still has a landline only and still uses an actual, real camera which is just that, I dunno how hard or quick it takes for one to take their DumbPhone out of their pocket, set to camera and take the pic.
I suppose longer than for me to take the camera out of my shoulder case, remove the lens cap and point and shoot.
In either case I suppose you're right since a UFO is not standing still.

When they have some person who just freezes when something from a great height is about to fall on them in the movies I would like to think I would get out of the way instead of being frozen in shock.
(They get crushed or killed because that is in the script to make the movie more interesting.)
I hope I'm never in a life or death situation to find out!
So perhaps they could also be frozen out of shock or fear from seeing something they don't every day.

Someone I know did film a spirit in their house and showed it to me. And there are plenty of videos of UFOs including by the military.
People, including scientists, will discount any evidence if it contradicts their belief system.
