Yeah, now it’s over complicated. Instead of two or three steps, it’s now 100 with all sorts of other variable choices within.
Try a google search on how to do it. I found that useful with new “enhancements” and “updates”.

Google Sheets is available offline if you download it and use it as an app on your desktop/laptop/tablet
There's also Neat Office (Free with pop-up ads asking you to buy it) but generally I'd say use Google Sheets and then important what you have working into Excel

but I'm not sure where I got it from. I tend to stay away from sanctioned things and buy them direct if I purchase them.
I think I just got it to show someone an alternative to Office (Libre and Open aren't up to scratch these days as you mentioned).
If you do take to the high seas though, be careful and only use trusted sources

I recall a pivot table section and everyone looked like deer in headlights. Some of them in areas where they should have been using it. I wanted to run out screaming.

I can go back a touch further to some people who used to type into the formula bar what they wanted =SUM(A1,A2,A3,A4) and all the variations you could think of and often they forget the function they were looking for.
