I don't think it's fermenting it would be fairly lively if it was and you would be able to see the bubbles at the top, almost like when you have a fizzy drink.

Make sure to let out excess gass every few days, and strain the dregs out with cheesecloth when it's finished as they are pure ethanol and can cause blindness

The method I used is to leave the lid slightly undone to let out the excess gas so I should be ok there … maybe I'll just give the lid more of a turn every couple of days just in case.
Oh ****, I saw something mentioned about blindness from home made wine but it sounded too scary so I decided to ignore it Ok, I'll be sure to not drink the dregs.

Oh no! The instructions I followed were to use a screw lid plastic bottle and they were very particular about how to put the lid on so that the gas didn't build up and explode. I still stored it in a bucket with a towel over it just in case.
That must have been hell to clean up

Mine was one if those vintage looking glass jars, meant for fermentation, so I wasn't quite expecting the spectacular fail.
