The method I used is to leave the lid slightly undone to let out the excess gas so I should be ok there … maybe I'll just give the lid more of a turn every couple of days just in case.
Oh ****, I saw something mentioned about blindness from home made wine but it sounded too scary so I decided to ignore it

Oh no! The instructions I followed were to use a screw lid plastic bottle and they were very particular about how to put the lid on so that the gas didn't build up and explode. I still stored it in a bucket with a towel over it just in case.
That must have been hell to clean up

I buy the "Hedgerow" wine kit from amazon, it's about £9 and has all the bits you need for winemaking except the bottle, sugar and the airlock but an airlock is dead cheap. It has proper wine yeast and nutrient, sterilising tablet, citric acid, pectolase, stabilising tablet and vegan finings (which clears the wine) and a muslin for straining. It's never let me down and they even offer support, answering emails straight away.
I've used blackberries, rosehips, elderflower and elderberries but I don't see why it wouldn't work with frozen fruit etc
