I'm not quite sure what to think. In TAS, Arkham Knight and from what I've seen of The Batman, once he turns it appears that the animal instinct takes over, much like many depictions of werewolves. However, I recently received a copy of Batman in the Seventies which features an early Man-Bat story and he's still able to speak and wears disguises to still pass himself off as human. What do people think?

It seems to really depend on the writer's interpretation. In some he's, as you point out, more of werewolf character. And in others, it's more of a Dr. Jekyll and Mr. Hyde transformation.
I prefer the more animalistic take though. I like a scientist turning into a monster with absolutely not control of mental faculties whatsoever.
So many stories, so little time.
