Forget for a second whether you like or hate the MCU, and like or hate the X-Men films.
If Fox and Marvel managed to work something out like with Sony, who would you like to play your favorite X-Men characters? There would inevitably be a overhaul in casting, so for those who enjoyed the X-Men films, I can imagine it can be hard to think of replacements, but who would you be comfortable with in these roles? I realize I'm likely not the first to post this (on this or any other X-Men page), but either way, I'm posting it now.
EDIT: The reasoning behind my casting choices of older actors is because I wanted to avoid having a movie with younger characters (though I originally had an idea like that, inspired by X-Men: Evolution with a little bit of the First Class comic). I'm nonetheless intrigued by the casting choices in the comments, such that it's bringing back my interest in a younger cast. I maybe eventually had a second section with younger cast members, but for now I'm still solid on my current cast for an older team, which is somewhat more like the 90's X-Men cartoon. After all the origin stories that have been coming out lately, and since we got one fairly recently for X-Men, I felt the need to skip that step and come up with an idea for an older team.
Currently, here are my picks for the X-Men (subject to change and be added with more content):
Xavier (or even Magneto) - Charles Dance
Cyclops - Ryan Gosling
Jean Grey - Jessica Biel
Wolverine - Tom Hardy
Storm - Danai Gurira
Beast - Bryan Cranston
Gambit - Josh Holloway
Iceman - Chris Pine
Rogue - Mary Elizabeth Winstead
Shadowcat - Elle Fanning
Nightcrawler - Doug Jones

I'd say most of them are too old for the parts. Coming in to the MCU the X-men should be younger. Maybe college age for most of them with characters like Rogue and Kitty around the same age as Spider-man. The X-men should be the junior team to the Avengers. Only characters like Banshee and Wolverine and maybe Forge should be older.

I chose these actors because I wanted to start out with a more seasoned team, not unlike the first X-Men movie. Instead of Rogue, however, it would be Kitty Pryde, she'd the the character the audience would relate to (more so than Rogue's portrayal in X-Men 2001), but without Wolverine hogging all the screen time as well. We'd find out about the X-Men from her perspective at first, until the story gradually shifts to the whole team equally.
Cyclops would have a much larger role as an older-brother figure, as well as be a more active team leader. If there's a sequel, Scott would probably take the focus (for me), but otherwise, like The Avengers films, the team would have fairly balanced screen time.
I was originally thinking of doing a movie closer to X-Men: Evolution (some of which I kept and implemented here), similar to what you suggested, but eventually I came to this. But hey, subject to change, right?

You can have a young team and still have them seasoned. That's why I say college age. In the comics, the X-men started out at around 16-17 (with Iceman at 15). 7 years of behind the scenes fighting would make them seasoned. I wouldn't want them as young as Spider-man who is suppose to be the youngest. And Rogue and Kitty are the 1st "Jubilee" characters. Maybe Kitty as the younger of the 2.
Can't think of any actors around that age, at the moment, beside that kid playing Jason in the Power Rangers movie kinda looking like a 20 something Cyclops.

Mark Strong for Xavier.
I don't know if Magneto should be maintained as a Holocaust survivor or made into a survivor of a more recent genocide. Hell, maybe a Cambodian or something.
Failing that, maybe Jeremy Irons.
The Core X-Team should be younger people when starting out, in their late teens or around 20.
Maybe Saoirse Ronan for Jean Grey, Shailene Woodley for Rogue, Ansel Elgort for Scott.
Logan should be in his 30s, the Jean romance not being possible due to the obvious age difference. Joel Kinnaman playing him.
