Rebooted?? If that will be the case why teased us that he's real? Iron Man won't be rebooted. They might recast Stark or develop a whole new character in the suit but they won't reboot the franchise. That would be silly.

Once RDJ leaves Iron Man it will be rebooted. If they just continue it then people will just see the next guy as trying to ripoff RDJ. I am not saying they are going to retell the origin or anything but it will be a different take on the Iron Man character. The only reason they "teased" us was because the fans hated this take on the Mandarin, so this was a way to make it up to the fans they pissed off.

They will not reboot one movie franchise that is part of a multi billion dollar project, the moment they connected all the movies into one universe that was it, if one of them falls they all do and i dont see them rebooting all the movie franchises anytime soon.
Pretty much garentee that they will either recast IM or remove him completely and continue on with the rest of the Avenger cast. -

I'm still saying that the best move for Marvel would be to have Tony Stark give his legacy to someone else and have him retire. They could have a different take on the character with the new IM and in the meantime they wouldn't frick up the continuity completely. Also they could give the opportunity to RDJ to come back a few years later if he wanted or if the new guy wouldn't work/be loved by the audience.
remove him completely and continue on with the rest of the Avenger cast.
I don't think they would get rid of him completely, like you said, it's a multi billion dollar project. I'm sure they have plans with IM in the future.
