One Flew Over The Cuckoo's Nest, for me. He also had the advantage of a brilliant supporting cast to be honest.

Cuckoo's Nest is by far Nicholson's finest screen hour. He's likewise superb in Five Easy Pieces and Chinatown. About Schmidt was a nice return to form for Nicholson as well.
You've seen Guy Standeven in something because the man was in everything.
