why didn't her career take off after Good Will Hunting?

Minnie constantly dropped tips to the paparazzi when she was dating Matt without his consent. She and Matt broke up before the Oprah show, and then she tried to get sympathy from the public by acting like she had been dumped on air. People didn't like her or her behaviour, and that wouldn't have helped her career. She's also not a classic Hollywood beauty, and her choice of roles may have been limited if she wanted more than just a supporting role.

- Matt didn't say anything about the Minnie stuff for years and there was nothing about a lovelorn stalker that ever came up (the paparazzi stuff was verified by photo agencies, not through Matt).
- There was one article at the time defending Matt (by unknown friends), and that's all - every other article criticised him without the facts.
- Matt never dated Penelope Cruz.

It did. She works steadily and she has had a career without gaps. It's like you expect people like Ned Beatty to have the career of Johnny Depp. Ned Beatty has had a decent career. Even prior to Good Will Hunting she was in some well known movies like Circle of Friends and she had memorable roles in the UK prior to that. Good Will Hunting did a good job of transitioning her to the USA/Hollywood market and she has never left. Minnie is in that group of actors like Matt Damon, and Ben Afleck, and John Cusack who get leading roles despite being average looking.
