Yeah, she really was beautiful. She had some kind of look, just timeless beauty, and her accent added to her mystique. I read she was in talks to do a film about "the Godmother" a.k.a, Griselda Blanco, an infamous crime family matriarch featured in Cocaine Cowboys, but nothing ever came of it.

I will weigh in here since I believe I can end this discussion with my thorough analysis.
Both MCA and Salma are astonishingly sumptuous beauties. Maria was very beautiful in her prime in the 70's, 80's, 90's and about half way through the 2000's. She has succumbed to societal pressures and has resorted to plastic surgery and Botox. Her pristine good looks waned over the years gradually.
Salma seems to be getting even more beautiful as she gets older year after year. She is just as beautiful now as she was 20 years ago. Maybe even more so.
Salma's beauty is impenetrable and she has completely defied age, whereas Maria has not.
Putting that aside I will go with aesthetics. Facially, I give the nod to Salma although they are both pretty in the face. Maria's face may be a bit more masculine. Maria also has very dark eyes. They look black. Salma's eyes are a lighter brown with hints of green and amber.
From the wa2000ist down I prefer Maria. Her butt and legs are GORGEOUS and super-sexy. It is those assets which keep me glued to her few bikini shots and in tight jeans.
Salma's legs are smaller and thinner, yet are perfectly proportioned. They are pretty, but they do not exhume the same hormonal reaction in me as does Maria's.
From the waist up, Salma wins. No contest. Salma has a much curvier torso with superior breasts. From the front, her waist is cut so that you really get the shapely hourglass effect. Her breasts are also perfect.
Maria's torso lacks the shape and is more tube-shaped. It isn't as well sculpted like Salma's. Plus, Maria doesn't have breasts to brag about.
Finally, I find Maria sexier. Somehow, the sum of all her parts add up more. I would rather wrestle in the hay with her. I can't really identify what it is, but she has this sauciness and impishness in her smile that turns me on.
These women are only 9 years apart. As far as beauty retention and aging, Salma wins by a wide margin. Maria in her prime was almost unbeatable, but Salma is a more timeless beauty. -

She doesn't have an underbite. Her teeth are perfectly aligned.
MCA has a big chin as well. She also has Botox injections making her face look like a frozen sausage. Her face has been under the knife a few times. It shows, so she is no longer natural. -

Not even close. And you can't base that on one photo. I base it on moving pictures. Heck, google "Salma Hayek chin" and you get results, not so for MCA. Hayek reminds me of Bernadette Peters in the chin dept. Not as severe, but similar.
This will be the high point of my day; it's all downhill from here. -

She does have a strong chin, but that in no way detracts from her overall appeal. I think it enhances it.
If you are that hung up about her chin you must have some serious issues with finding women.
Clark Gable had Dumbo ears.
Clint Eastwood had a protruding Adam's apple.
Sean Connery is bald.
Michelle Pfieffer had eyes widely set apart.
Lauren Hutton had the gap in her teeth.
Megan Fox has deformed thumbs.
Audrey Hepburn had a giraffe neck.
And on and on.
