      I think you've picked their three best films. Following those three, their best films are Barton Fink, Miller's Crossing, Raising Arizona, Blood Simple, and True Grit.
      I have a hard time judging something to be the most 'underrated,' but I think Intolerable Cruelty, The Ladykillers, and The Man Who Wasn't There are better than their reputations.

                  No Country is their best followed by Fargo. True Grit is a solid third best. Those three are masterpieces.

                            They're terrifically talented directors and there's nary a weak movie in their filmography. However, I truly consider Blood Simple to be their finest work, perhaps one of the greatest directorial debuts of all time. Blood Simple is so incredibly tense, well-acted and riveting, even the whirring sound of a ceiling fan sounds menacing.
