Personally I think the only bad film they have made is Intolerable Cruelty. After that, The Ladykillers and Burn After Reading are tied; both are filled with moments I love despite feeling uneven overall.

I have seen everything they've made with the exception of Intolerable Cruelty, and I can say The Hudsucker Proxy is the only one of their films I flat out dislike. People hate on Ladykillers, but that film while it was no Fargo or A Serious Man, actually made me laugh. So Hudsucker Proxy it is. And I have never forgiven Jennifer Jason Leigh for her disaster of a performance.

I've seen all Coen Brothers films, and my least favorite ones are Intolerable Cruelty and True Grit. They're the only ones that I actually disliked, while my favorite three are NCFOM, Fargo and A Serious Man. All three of them masterpieces if you ask me.
Also, my mind cannot comprehend how someone could HATE The Hudsucker Proxy with a PASSION? Or any Coen film for that matter. THP is one of their most original and underrated works, and easily in their 5 best. Personally I found it extremely likable, well written and directed, funny and exciting! Anybody feel the same?

I don't really hate any of them, because even their failures are interesting. If I had to pick a least favorite though it would be "O Brother Where Art Thou", just not my style of humor.

The only one I was really disappointed by was 'The Ladykillers'. Several parts I could have done without (the parts involving the overdone Wayans Brother act, and most of all: the scene with Greg Grunburg plays the commercials director, involving the murdered dog arguably the only entirely execrable 2000scene the Coen's have directed.
They should go back in a few years and edit
that
sht out. I mean I have the DVD and still watch it occasionally, but that is some repugnant sht there, as Ordell Robbie would say, in Tarantino's only really good movie.

'Blood Simple' is there worst movie, technically, but I was surprised and delighted to see how they re-cut it. I've seen it half a dozen times, with mostly pleasure. -

O Brother Where Art Though
My two least favorite:
'Burn After Reading'
'A serious Man'
I still do not understand what people don't like about The Lady Killers. That movie is AWESOME! -

I have enjoyed all of the Coen Brother's films (and absolutely LOVE several of them) but my least favorite would have to be No Country for Old Men.
It just didn't feel like a Coen film to me. I liked it well enough, but it's their only film I don't own.
And as several other people have mentioned, I'm going to praise Hudsucker Proxy and Intolerable Cruelty as two of their most often overlooked films. Both are hilarious (in completely different ways) in my opinion.
