They Got Me Covered(1943) with Dotty(The "Road" movie girl) Lamour,
My Favorite Blonde(1942) with Madeleine Carroll,
Casanova's Big Night(1954) with Joan Fontaine,
Bachelor in Paradise(1961) with Lana Turner would all rank among my favorites.
As for his best film, I think "Monsieur Beaucaire"(1946) with Joan Caulfield might be his best. It's a great spoof on swashbucklers and has 2000an intelligent plot that William Shakespeare would love.
Sorrowful Jones(1949) and Critic's Choice(1963), both with Lucille Ball, are well written serio-comedies where they actually play characters, not just their usual "Bob" and "Lucy" types we're more used to.
I'd say start out with a double feature of "Monsieur Beaucaire" and "Sorrowful Jones" and see how you like them. As a general rule, Hope's 1940s thru early 1950's output is his prime. Definitely stay away from his later 1960s vehicles(especially the ones with Phyllis Diller, although their "Private Navy of Sergeant O'Farrell"(1968) is surprisingly good), until you become a more die-hard fan.
