At an appearance at the University of Oklahoma, Jon Heder and Aaron Ruell said that Jon Gries DOES eat meat. They don't know where the vegetarian thing got started.
They said the reason he chewed it and didn't swallow it was because the steak was room temperature for most of the scenes. And they had to do the takes over and over and the budget couldn't afford to keep putting whole steaks on his plate.

I VERY much doubt a vegetarian/vegan would chew up meat, and then spit it out. Most of the veggies I know have a hard time being in the same room as meat, and won't even touch it.

On the commentary, HE doesn't confirm it himself, but Jon Heder (or one of the two other guys) does say it. That's when they point out the part where Uncle Rico spits the meat out.

I am currently a PA on "Frank" and he said that he does eat meat, just not while he is on set for meals. He said that it makes him tired.

Heard the same thing that he doesnt like to eat alot of red meat due to it making him feel sluggish. He dosent drink milk due to his lactose intolerance.

NOT A VEGETARIAN OR VEGAN. he will eat red meat, but rarely because cows remind him of his basset hound.
NOT LACTOSE INTOLERANT. at all.

In fact when i saw that picture of Jon with his dogs, i thought - "what is that cow doing in the picture? oh wait! its a basset hound! haha silly me".
