    beep Red" is a derogatory term for cheap Italian red wine. I think that in Father Mulcahy's case, it's a reference to him being a Roman Catholic priest with red hair.

        In the novel, the Chaplain is nicknamed after that same cheap Italian red wine he used as sacaramental wine, which they called "Daygow Red"

              It got bleeped, rightfully so, because it's an ethnic slur, no different than the "N-word". I'm Italian (first generation American). My father heard that word and others as unsavory all throughout his time in the mostly-Irish college he attended. It's ugly.
