what did Buford get so angry about in the first action scene, the one where he grabs this guys hand and throws the dices down? Was the dealer cheating or something? And Buford got angry because his money was at stake, is that it?

Buford had loaned his friend Lutie money to play and then discovered that the stickman at the craps table was switching to dice loaded to lose.

Yes, they guy was cheating and THAT made him angry (less about the money, Id say).
