      Whenever caught, it just stands there and screams while transforming, sometimes not even attacking. It's very panicky and dumb once identified.
      To be fair, even the smartest humans can panic and act very dumb when their survival is at stake.

          It seems to be at its most vulnerable when it's in the middle of replicating. The scene with the dogs was similar. It didn't do much other than howl, and by the time it even tried to escape, it was too late. It got torched again.
          I also don't think it can kill humans that easily. It had Windows by the head, and it still took a while for him to die.

              It wasn't easy. Those scenes lasted for minutes. Heck, that dog scene alone is almost six minutes long. And it still got toasted.

                  Windows still wasn't dead. He was screaming and flailing and trying to fight back. It wasn't an easy kill.
                  Funnily enough, Windows at first was frozen in panic. Just like the Thing was as Bennings. It happens. Even to aliens.
                  And yes, 3 dogs. If it struggle for 6 minutes to kill 3 dogs, it'd take it even longer to kill 7 humans.

                    OMG he was flailing?! What a warrior! He was bleeding out and going to die if he didn't turn. Stop it.
                    Struggled?! It was outnumbered 3-1 and not only won, but wasn't injured at all from the conflict.

                      Yep, struggle. It took the thing 6 minutes to kill and absorb 3 dogs that weren't even attacking it. It took so long, Childs had time to get dressed, go get the flamethrower, and then kill it. Heck, the thing wasn't even done killing or absorbing the dogs when it got fried.
                      There's no way it'd be able to kill 7 humans "very easily."

                              Yep, Windows was still moving. The Thing is surrounded and at a disadvantage because he was tied up and had a flamethrower aimed at him. Yet, it still took over 30 seconds to kill Windows rather than finish him off "extremely easy" and attack either MacReady or any of the tied up people. And even after that, Windows wasn't dead or fully assimilated.

                                The Thing grows more intelligent the more biomass it acquires. For example, a Thing the size of a cat wouldn’t be very smart. But a man-sized Thing would be much more conniving

                                  I'm inclined to agree their intelligence depends on how advanced the host. Does that mean if one of them gets an arm (or anything else) cut off, the appendage is "dumber" because it's a smaller less formed creature? Like the spider head?

                                    Precisely. But it could still assimilate with more organic tissue to become bigger. The Thing is basically an amoeba like ‘The Blob’.
