I have watched the movie loads of times, but still can't decide whether they stay together as a couple at the end of the movie, seems ambiguous. Any thoughts?

Nope hate to burst your bubble but they shared one last pasionate kiss after that she board the plane and he went to the office for his next assaignment.
It is also stated on several movies sites including wikipedia -

Pretty sure OP meant after the movie ends, sometime later on in their lives.
Regardless, I don't think they did. I Will Always Love You captures their relationship quite well, and heavily implies she will always love him despite not settling with and marrying him. -

It's my understanding they didn't and that the kiss at the end is a Goodbye kiss. It's a pity though, as the song "I will always love you" implies they love each other so they should give it a shot, despite the different lives they have.
