    In the movie, when the dynamite is detonated, or shot, by Gates, both he and the Sheriff are thrown back into the waterfall. When they are falling, you can see that the explosion causes his handcuffs to break (by showing his hands pull the handcuffs apart). Highly unlikely situation to have the cuffs break like that, but nevertheless that's what happens!

      jybugsy33 is correct. And this plot device is dumb, dumb, dumb.
      Although not as dumb as the Sheriff handcuffing Gates in the front (rather than behind his back) in the first place.

            In that situation, it made sense.
            They were deep in the Oxbow and were on horseback. Gates had to ride his horse out, through extremely rough country. Even if he was in custody, he couldn't ride through country like that with his hands behind his back; he had to be restrained in a manner that let him handle the reins.

              As with much of this movie, total plot holes. Much of the movie requires the viewer to play really really dumb to actually believe any of it.

                A "plot hole" means there is something which is not (and cannot be) explained.
                The breaking cuffs is not a plot hole since the movie clearly shows what happens. You can call it "unlikely" but you cannot call it a "plot hole".
                When I'm gone I would like something to be named after me. A psychiatric disorder, for example.

                  This is beyond unlikely. For the cuffs to have broken due to the explosion his hands would have been blown off as well. It is a plot hole as it makes no sense. When I originally saw the movie I could not figure out how in the world his cuffs came off. You have to make an assumption that the explosion somehow only effected the handcuffs while having absolutely no effect upon his hands, arms, or any other part of his body. Maybe we are to believe that some "Indian Magic" helped to break the handcuffs. That would be fine if they would simply have implied it in some way. Yet they did not. They just leave it up to us to figure out how it happened, no matter how absurd or "unlikely" the theory we come up with.

As stated, it is unlikely, but it is always possible that some piece of debris hit the chain and assisted. Granted we did not see it, but stranger things have, and do happen on regular occasions. Frankly, you're trying far too hard to make this film seem stupid, but while it is fantastical, where have been a great many less intelligent, and far more poorly made films released. In fact, a lot of films that come out now have more logical gaps and completely stupid scenarios (See Star Trek: Into Darkness).
