I'm asking a serious question, because this movie, while I love it, perplexed me because everyone drank SO MUCH WINE all the time and only get really drunk in a few scenes. But man, they would be dead drunk like, for instance, at the dinner scene when Miles got really drunk and dialed his ex, but the rest of them weren't that buzzed yet they showed the wine flowing and flowing through steady montages and you'd think they'd all be toasted. It reminded me of CHEERS, a show about barflies drinking at a bar, and yet they're always sober. It just seems like, with all the gulping going on in SIDEWAYS, that everyone would be constantly rip-roaring plastered. i know with wine that a wine hangover is the worst on earth. and if you drink too much, you get sick in a really nasty way. i just fail to discover the difference between wine fanatics/tasters and people with drinking problems. a fine line, perhaps. that classy glass and all the fancy talk covers up the fact people are getting a buzz, perpetually.

You know it's something I particularly noticed last night after watching it the second time. First time, I didn't think much of it but I drink more wine today than I did when the movie first came out.
And wine is between 10-14 percent alcohol. They drank a lot at dinner and I don't see how they could drive anywhere after that. Plus all those tastings get you pretty buzzed. I had to pace myself in Napa/Sonoma.

Maybe they were at the restaurant for several hours, eating and drinking water occasionally. Of course the scene does not indicate this, but I was going on experience here. And my car knows the way home.

About the dinner scene, I know in restaurants you could buy wine by the glass or the entire bottle, maybe they did it this way? Correct me if i'm wrong.

Miles, Jack and also Maya seem like regular drinkers (not real alcoholics). Plus if you do not have much important to do, I think it is not impossible to get drunk from morning to evening and not pass out. I did a similar trip to Portugal with two friends, we got boozed all day and drove every 2 days to a new city. No one passed out ever, but after 4 or 5 days I started to think slow and got really worn out.

I want to say at dinner they go through 3-4 bottles, which amounts to 3-4 glasses a piece. When you factor in water and food intake, and duration at the restaurant, I'd say a seasoned drinker would fare pretty well. I think Miles's biggest mistake was drinking too fast and not hydrating enough.

As has been said, nobody's drinking as-shown was unrealistic (especially since it's almost always with food), except with Miles. Sometimes he's only had one bottle over 3-4 hours and then acts like he's had two-three, other times like the running-down-the-hill scene, he's again had one bottle which he has clearly emptied since he chucks it away, yet is unphased - and that was chugged in a few minutes. However, it's conceivable in the first dinner scene where he makes the drunk-dial that he's just ordered more than anyone else or been killing off the group's soldiers.
Regular drinkers have a higher tolerance for alcohol. It takes me 2 bottles to look like Miles did leaving the Hitching Post alone on 1 bottle, so maybe he had more than just the one shown. It is unrealistic, though, he could keep downing bottles every 6-12 hours for the better part of a week. People need time to recover, and if they do overdo it and poison themselves, it should be a few days at least before they go back at it.
Still, fantastic movie; none of these are serious complaints. Only real fans could nerd out about minutiae like this.
It's probably for the best they didn't get to drink so much on set, but it's still amusing to hear Giamatti/Church fondly remember which were the "real" glasses of wine in each shot. Either they really wanted a legitimate drunk for their scenes, or that purple syrup substitute was really nasty.
