I just bought this movie a few weeks back, having avoided watching it since it came out (didn't want to see an "old Rocky" trying to relive his glory-days). Having finally watched it I can say that it is now my favorite movie of the bunch.
My take on the "I appreciate it" thing it shows that Rocky is down-to-earth, humble, and an all around "good guy" and makes for a great contrast to Dixon who was cocky, full of himself, and spouting off about how he was better than everyone. -

Stallone says it in most of his films. In Demolition Man he said it when they made a toast to him at Taco Bell. I guess it's just one of his trademark lines. I've heard in say it in several interviews too.
