I've seen the movie several times but only upon just watching realized he plays the southern dude who tells him how to cure meat in the wild. Wtf, mind blown

Yep. I've seen this film many times and maybe it's just because it's HIM but I'm not sure he nailed the role.

I have had this movie on DVD ever since it came out and have watched it many times but it was only the other night while leaving the credits rolling that I noticed his name and that he played Kevin I too was really surprised

He is a Hutterite from South Dakota, and yes, I didn't realize that was him, although the first time I saw this, I had never ever heard of him.
