I really expect it to be the next big thing. The opening credits is probably the thing I'm excited about the most
just hope JJ Abrhams didn't hijack the thing to himself like he does sometimes.
Oh and of course- as someone who appreciates the music of GoT, how was the score? I heard it's already noticeable

JJ Abrams name is in the credits as producer or whatever, but that's pretty much is. No hijacking in sight.
The score is noticable, but I'd have to rewatch it to say how much I liked it. It's less orchestral than GoT's score and relies a lot on piano.
We all have to decide for ourselves how much sin we can live with -

Maybe it's my lack of unwavering faith in the name of Nolan, but I can't for the life of me imagine how Westworld's premise can be sustained for more than a season or two, so I'm not sure it can take over from GOT in that regard.

I believe Nolan has a plan. To me it doesn't seem like something that can last this long as well, but Nolan already said he has a complete plan for 5 seasons, and if He says so I tend to believe Him. Think of Person of Interest (if you watched it), while watching the first season you couldn't possibly have any chance guessing what it'll evolve to. Jonathan knows how to do this stuff. Add that to the fact he invented Memento and Interstellar and wrote The Dark Knight, I don't doubt Him for a second.
