My thoughts on the butcher may be part of the history of Derry. Maybe he's a murderer who was around during a time in which It woke up to feed again.

What if the Butcher is Henry's father?

They have a different actor for the two parts.

The Butcher could be linked to the fact of Mike working with Leroy in the abattoir. The crew posted a pic of sheep in the Hanlons' farm and a slaughterhouse. Also a pic of Mike riding his bike and stopping next to a butcher shop in downtown Derry was leaked. So maybe the Butcher could be a manifestation of It and comes to Mike and attempts to slaughter him like a sheep.

The Butcher could be a flashback to Claude or easily mikes fear as his family own a farm

The Cary script basically featured a good deal of the Claude Heroux massacre kept in, which I gotta be honest, I liked(kept true to the book).
And yeah, in Cary's script, Mike goes to the Butcher's market to sell his farm's meat.

That happens only in the book. The bird won't be in the movie (sadly).

But the new film supposedly follows the book closely, so maybe the bird is in it?

Yes, the film is apparently going to stay close to the book, but that doesn't mean it'll be 100% faithful to it. Remember that it's set in the late 80s rather than in the late 50s, Butch is a cop, Judith is an original form of It that's not in the book, etc. Plus, the movie's budget can't afford a giant cgi bird. They'll replace it with something else.
