I don't particularly care if she ever had sex, but you actually raised a point I hadn't thought of. For the protagonist of a 2.5-hour movie, it is surprising she is given zero backstory. This may be because the Maya character was a composite of several real-life CIA operatives, and the less we are told about them/her, the safer it is for the real-life operatives to keep their cover.
The eating thing was actually a nice touch, that's the way a lot of people cope with life. -

That is possible, and that much is left to the viewer's imagination.
Which may be one of the many things they did right in this film.
And Dan and Maya were obviously good friends on a professional level.
On the other hand, maya was portrayed as being so single minded and devoted she came off as being practically asexual. -
