I second The Elephant Man. It was the first film I saw him in, and he was quite lusciously handsome. His subsequent portrayals of terribly repressed men and the monstrous Hannibal Lecter make one see him in a very different light.

I second Hitchcock. I love him in everything but that performance really impressed me.

He was relatively young while leading,
        When Eight Bells Toll.
A pretty low budget flick, but a physical role for a Hopkins in his mid 30's. It's kind of fun to watch him in an action role.

Probably his first really notable role was as Richard the Lionheart in the truly wonderful "The Lion in Winter". This is a must see movie, even though he only had a supporting role.

Fracture and The Edge are FANTASTIC Hopkins movies. If you haven't seen them yet, do it!!! You won't be disappointed.

It's only been mentioned once, but The Lion In winter might be his best. Though not really because of him, he's still great in it.

Tony was at his freaky best in 'Magic' and made easy money in 'The Rite', both enjoyable films.

There are so many choices but out of recent stuff I recommend Hitchcock.
Glad to see when Eight Bells Toll listed. Underrated film.
                          It's not "Sci-Fi", it's "SF"!

I like when he gets to have some fun.

Worlds fastest indian, and i really like Instinct
                              Silence of the lambs obviously
Also The Edge, Meet Joe Black, Hearts I5b4n Atlantis, and Chorus of disapproval
edit to add, Beowulf was probably his last best movie 2007

The Remains of the Day - his best performance. Such a great pairing - him and Emma Thompson.
Howard's End - again, with Thompson.
Nixon - great how he captures Nixon's spirit in this film.
The Edge - another good performance in this little known thriller.
                                Shadowlands.
Magic - with the creepy puppet.
                                Amistrad.
