Why are the bigger ones always harder?

I'm talking about olives; in case anyone is wondering.
I bought the ingredients to make a Greek salad, so I picked up jump green olives stuffed with pimento, sliced kalamata olives, and for funsies, I also picked up jumbo green olives stuffed with bleu cheese.
The sliced kalamata olives are perfect, but the green olives stuffed with bleu cheese are incredibly hard. It's almost painful to chew them. I'm going to have to try slicing them and see if that makes any difference. The large (jumbo?) green olives stuffed with pimento are also really hard, almost tough. I normally buy what I'd consider "regular sized" olives, but I wasn't paying attention. (I'll give leeway to the bleu cheese ones because that's the only sizes they have). But I had no way of knowing that those jumbo green olives would also be so tough.
I don't remember if I've ever had jumbo olives before, but it never occurred to me that they'd be harder to bite into just because of their size. Is this normal?
