"Be still, Taggart!"
"Here we take the time and trouble to kill every last Indian in the west, and for what; they go and appoint a sheriff that's blacker than any Indian. I am depressed.
"Mr Taggart, me and the boys sure do hate to see you like this. How would you like it if me and the boys was to shoot that ni**er dead? Would that pep you up some?"
"That might help."
"Nevermind that sh*t. Here comes Mongo!"

Hedy (It's Hedley!) Lamarr: "Oh, Lily you're magnificent! Kiss me!"
The line is not that funny in itself, but Harvey Korman's delivery is impeccable, and followed by him smacking his teeth right into the back of the head of Lily is just pure comedic gold.
Harvey Korman in this movie is one of the best comedic performances I've ever seen.

I can't believe these haven't been mentioned.
Governor - "Work, work, work." Turns to secretaries breasts - "Hello boys"
During the fighting scene near the end when the guy starts slapping the cowboy's chest screaming, "Brute! You big brute!" Then starts crying while the cowboy consoles him. That cracks me up every time!

"Oh come on, you know. The camp town ladies sing this song, doo-dah, doo-dah"
"Hast du gesehen in deiner Leben? They blacker than us!"
"Tell me, Tex-ma'am, are you in show-business?"
"Nope!"
"Then why don't you get your fwigging feet off the stage!"
"Now comes a time of great decision,
Are we to stay or up and quit?
There's no avoiding this conclusion:
Our town is turning into [insert word that means fces but rhymes with 'quit']."
" a Laurel, and Hardy handshake"
From Men in Tights:
"A black sheriff!?"
"Why not - it worked in 'Blazing Saddles'!"
"Mongo's not so much a 'who'; more of an 'it'."
"What he said!" -

Reverend Johnson: Now I don't have to tell you good folks what's been happening in our beloved little town. Sheriff murdered, crops burned, stores looted, people stampeded, and cattle raped. The time has come to act, and act fast. I'm leaving.
