            It's kinda distracting that he didn't tell the waiter if he wanted anything on the sandwich or not, and the waiter didn't ask either.

                It's a play on words. He wants to 'stake' the Stanwyk family, and he pronounces the other sandwich actually as "Stanwyk".
                Listen carefully, it's not "sandwich", it's "Stanwyk".

                    It was a pretty upscale tennis club. I'm sure if you order a steak sandwich its a lunch entre including fries or chips, cole slaw, etc.. Didn't need to specify to the waiter.
                    Not to mention, later he orders Lobster and caviar for lunch, along with some Dom Perignon. The steak sandwich was probably the cheapest thing he could get, along with the bloody mary of course.
