How is it that a vampire can't touch or even look at a crucifix, and gets burned by holy water but a witch can speak the name of God without being struck dead on the spot?

One has nothing to do with the other. Many believed that if a person who claimed themself to be a witch walked into a church they would be struck by lightning. This has turned out not to be true.

Bram Stoker started that legend. And also, Dracula did survive in the daylight, in novel.
