Why would a vegetarian work in a fast food restaurant?

Well you take Darlene from Roseanne, she WAS opposed to selling meat in addition to not eating it. Now to the OP, I never wondered about that as a kid, BUT, in the novelization of Good Burger, they explain that Deedee plans to revolutionize the fast food industry from the inside and THAT'S why a vegetarian would work at a hamburger restaurant.

Novelazations don't excuse plot holes (if this really is one).
They also carry more details of the story than the final film does. And the novelization contained photos of scenes NOT in the movie, so it must've been closer to the original script. There was a scene where Kurt gives Ed a pony to bribe him, and Ed rides it into Mondo Burger, and there's a photo of him on the horse, but that wasn't in the movie either. -
