The Lincoln Conspiracy by David Balsiger & Charles Sellier
Fascinating minute by minute look at the conspiracy behind the Lincoln assassination. A page-turner that reads like an exciting novel.
Health nuts are going to feel stupid someday, lying in the
    hospital, dying of nothing.

I'll second that. Just stay far away from the "movie".

Libra by Don DeLillo - A lot of DeLillo's stuff hints at boarder conspiracy. This one about Lee Harvey Oswald and the Kennedy Assassination hits on it directly and is one of his best works.
Foucault's Pendulum by Umberto Eco - Three vanity publishers build their own vast Templar (Rosicrucian/Freemason/Illuminati/etc) mythology and draw the attention of some forces they wish they hadn't.
The Illuminatus! Trilogy by Robert Shea and Robert Anton Wilson - I own this but have not yet read it. One of the seminal works of conspiracy fiction.

Dick Gregory is a conspiracy theorist, right? He didn't write any books on conspiracy theories, did he?

Not really my cup of tea, but I thought I'd mention it.
