I love soup, i make it year round and bring a cup to work every day for lunch.
My favorite to make is Italian Wedding Soup. Basically it's chicken stock with little meatballs, the usual veggies (onion, carrot, celery, potato), and chopped escarole. I just throw chicken thighs in there instead of meatballs. Also you're supposed to use some type of soup pasta but i prefer barley.
Another soup i like to make is sausage and bean. I use turkey sausage and navy beans.
My sister makes the absolute best home made french onion soup. I've tried her recipe but it never comes out as good as hers.
I also make a variation on the wedding soup. I use a small pkg of chuck steak and a small package of chicken thighs. Soup veggies. Barley. This is so simple but is probably the best tasting soup i make.
Lastly i like to do a homemade corn/veggie chowder. It started out as corn chowder but every time i made it i added more veggies to it. I like my chowder a little thinner than you usually get in a restaurant where it's thick like oatmeal.

I add finely chopped carrots to mine with the potatoes. The taste varies depending on what cheese you add. I usually use combo of sharp cheddar and Velveeta.

I like the bean/legume soups the best. Bean with bacon, split-pea and almost any lentil soup are high among my favorites.
I bought some lentils recently, so the firing up of the soup kettle isn't far off. -

I'm making chicken noodle soup today. Lemon is the secret ingredient to all my poultry based soups, never thought about using dill so I'm gonna have to try it in this batch. If you boil the carcass with the lemon it draws out more good things from the bones, so I've been told.
I love to make soup. My favorites are split pea with a ham bone, broccoli potato cheese with bacon and served in homemade bread bowls, chili (I consider it part of the soup family, along with most stews), vegetable chowder, she crab, beef with barleyI could go on and on.
