    Made these the other day and they turned out very good.
    12 hard boiled eggs
    1 qt. sliced beets
    1 1/2 cup cider vinegar
    1 tsp. salt
    1 onion sliced
    1 1/2 cup sugar
    1 tsp. cloves
    Place peeled eggs in glass jar. Combine all other ingredients in saucepan and bring to a boil. Turn down heat and cook till sugar dissolves. Pour hot ingredients over eggs. When cool put in refrigerator. Wail AT LEAST 24 hours.
    I did not eat just the eggs. Ate the beets and onions with the eggs. Great stuff!

      I regularly pickle eggs, but I just use left-over pickle juice and they come out great. Your recipe loses me when you add beets. Ugh! Horrid things!

        My parents used to buy pickled beets then keep the juice for eggs. They came out a lovely purple.

            I'm quite sure I tried pickled eggs when I was younger but I can't recall if I actually liked them. I'm willing to try one again if I ever see them on a menu.

              I enjoy pickled everything. Corn, green beans, eggs, and pickled sausage. Just thinking about it makes my mouth water.
