Not sure if this could be of any help- have you checked " Waterworld"? I don't remember the ending, and not sure if there were any sea monsters, but I am thinking maybe thinking outside the box?

It isn't The Light at the Edge of the World. I thought since it was from a Jules Verne story it might have a sea monster in it.
Doesn't look like it's Eric the Viking either, although it does have a sea monster.
At least I found two more movies that were possibilities, although neither matched the new (circa 2015) info.
